Cookin' with the Neighbors ... Chicken Teriyaki Meatballs With Edamame and Snow Peas

My neighbor, Andrea, has introduced me to a whole new world of healthy eating by using a stove (novel idea I know...).

She made this one night before we hit the gym and I have to tell you it's a taste bud pleaser! A healthy, tasty asian inspired meal made with fresh or frozen veggies of your liking. This meal takes less than 30 minutes to cook! Enjoy!
Ingredients
  • 1 1/2 cups long-grain rice

  • 1 1/4 pounds ground chicken (or turkey)

  • 2 scallions, chopped (optional)

  • (1/4 cup cilantro, chopped (optional))

  • 2 tablespoons grated fresh ginger

  • 2 tablespoons canola oil

  • 1 cup frozen shelled edamame, thawed

  • 1/2 cup low-sodium soy sauce

  • 2 tablespoons brown sugar

  • baby carrots, sliced in halves or quarters

  • snow pea pods


Directions

  1. Cook the rice according to the directions on the package.

  2. Meanwhile, in a large bowl, combine chicken or turkey, cilantro, scallions and ginger. Shape into 16 meatballs.

  3. Heat 1 tablespoon of hte oil in a skillet over medium-high heat. Cook the meatballs, turning until cooked through, roughly 10 to 12 minutes.

  4. Combine the veggies with meatballs and then in a small bowl mix the soy sauce and brown sugar. Add to skillet, toss the meatballs and veggies and simmer until saus is slightly thickened.

  5. Serve over the rice.
